Hello Friends, I hope you all had a wonderful New Years!  I wish you the very best in 2014.  We started the New Year with upper respiratory illness for 1/2 of the household.  Most of us started getting sick on Christmas.   I think we have finally turning the turn and are heading towards health.  As always, menu planning really helped to keep the house running even with my hubby and I very sick.  We had the plan of what was for supper and the food was in the house.   The slow cooker also helps a lot when you are sick and still have a house of people to feed.   If you can manage to get everything in the slow cooker, you will wake up to a nice warm meal with little effort.  Makes for a happy family, when Mama is sick!

If you want to simplify your life in 2014, I would suggest giving menu planning a chance!   If you want to start out easy use a service like emeals to provide you with a monthly menu and shopping list and all you have to do it buy the groceries!!   I promise you won’t regret it!

Food Budget:  Decided to start tracking how much we spend on food/household expenses each month again in hopes to budget appropriately.  Wanting to keep our budget at $100 per person each month.   We are a household of 5 adults, 1 growing boy who eats like an adult and 1 toddlers.

Shopping Trip:  1/4/14
Aldi – $115.18
Walmart – $87.38
Sam’s Club – $58.20

Total for 2 weeks of food:  $260.76 / 6.5 (count baby as 1/2) = $40.12 per person or  $130.38 per week on groceries.

Celebrating Everyday Life: – July 28th, 2013

It has been a very busy week in our home.  Tommy has been in Musical Theater Camp all week and headed to Riverside Lutheran Bible Camp in Iowa today.

This was the first year Tommy has participated in Musical Theater Camp at our church.  I was so impressed by the entire production.   We have such amazing and talented staff that work with our kiddo!

Tommy headed to camp this afternoon.  He will be gone until Friday, which he is fine with but Mom is missing him already.  Today as we were getting ready to send our little guy off to camp, I was struck by what an amazing church family we have.   The pictures above were sent to us by one of those amazing parents.  What a relief that the Verley’s were taking the kids down to camp!  They are the greatest!

I have always loved finding pictures on my camera taken by my children.  They are always a wonderful look into their thoughts!   These are some of the pictures I found this week from our budding photographer, Tommy!  Never know what you will find, seems this week that Tommy was admiring the beauty of flowers in random neighbor’s yard!

I has has some leftover refrigerator pizza dough so I made bread sticks out of it.  These turn out very good, I was surprised!

Menu Plan Monday: Pantry Challenge Week #2

Menu Plan: July 15th –  21st

15th – Monday – Homemade Cheesy Tuna Helper with Peas

16th – (Tommy Dr) – FRIED RICE WITH CHICKEN & Egg Rolls

9 bacon strips, diced
1-1/2 pound boneless skinless chicken breasts, cubed
3 medium carrot, chopped
3 celery rib, chopped
6 eggs, beaten
4-1/2 cups cooked rice
6 Tablespoons soy sauce

In a large skillet, cook  bacon over medium heat until crisp.  Remove to paper towels.  In the  drippings, sauté the chicken, carrot and celery until chicken juices run clear;  remove and keep warm.  In the same skillet, scramble eggs over medium heat,  breaking into small pieces.  Stir in the chicken mixture, rice, soy sauce  and bacon.  Yield:  6 servings

Menu Plan Monday: July 1st Edition

Menu Plan: July 1st –  7th

Summer time is a bit crazy when you also work Full Time outside the home.  Menu planning is a life saver for our family.  We try to have a meal each night together, but with soccer games and soccer practice that also can be very challenging.   We do the best we can and menu planning helps a great deal.

You might notice behind many of my menu items, it says Emeals.   Emeals.com is a great menu planning service.  For a fee of $5 a month you receive a weekly menu plan.  Emeals has many type of meal plans.  We personally receive the Aldi Classic Family menu since we find that shopping at Aldi it very good for our budget.   Other menu plan options include, gluten free, clean eating, Paleo diet, portion control and many more.  If you have been wanting to start menu planning Emeals is a great way to ease into the habit of meal planning without spending hours trying to figure out what to make!

ON THE MENU THIS WEEK:

July 1st – (Game – 6:00) – Chicken Salad / Veggies

2nd (practice – 6:30) – Bacon Lettuce Tomato Salad

3rd – Firecracker Shrimp/ Angle Hair Pasta and Caesar Salad (Emeals  – 486)

4th (holiday – Potluck with family) – Ribs – Cole Slaw – Watermelon

5th – Beef Stroganoff – Peas

Beef Stroganoff

  • 1 lb ground beef
  • 8 oz sour cream
  • 1 can cream of mushroom soup
  • (1 t salt, 1 t onion powder)
  • (¼ c water, 1 t beef bouillon cube)
  • 1 pkg egg noodles
  • 1 pkg frozen peas

In large skillet, brown the ground beef; drain.  Add sour cream, soup, salt, onion powder and water to skillet. Heat to a low boil; add bouillon.  Stir to dissolve; reduce heat to simmer.

Boil noodles while preparing meat mixture. Serve stroganoff over cooked noodles. Serve with steamed peas

6th – Chef Salad

7th – Rotisserie Chicken, Stuffing and Corn
