Recipe to try:

 

BLT Macaroni Salad – ♥ ♥ 
 
1/2 cup mayonnaise
3 tablespoons chili sauce
2 tablespoons lemon juice
1 teaspoon sugar
3 cups elbow macaroni, cooked
1/2 cup tomato, seeded and chopped
2 tablespoons green onions, chopped
3 cups lettuce, shredded
4 slices cooked bacon, crumbled

Directions: 1. In a large bowl, combine the first four ingredients; mix well. 2. Add the macaroni, tomato and onions; toss to coat. 3. Cover and refrigerate. 4. Just before serving, add lettuce and bacon; toss to coat

Saturday, 23rd – Chicken Risotto – veggie

Sunday, 24th (Magnuson Sunday)- Short Rib Barley Soup – Yeast Rolls (soup cooks 5 hours)

Monday, 25 (Soccer 7:45) – Beef Stroganoff with Green Beans

Beef Stroganoff (double recipe) – Peas

1 lb ground beef
8 oz sour cream
1 can cream of mushroom soup
(1 t salt, 1 t onion powder)
(¼ c water, 1 t beef bouillon cube)
1 pkg egg noodles
1 pkg frozen peas

In large skillet, brown the ground beef; drain. Add sour cream, soup, salt, onion powder and water to skillet. Heat to a low boil; add bouillon. Stir to dissolve; reduce heat to simmer.

Tuesday, 26 (Soccer 7:00) – Mom’s Mac N Cheese (Double) – Polish Hot Dogs

Menu Plan Monday: July 30th Edition

WEEK #1

JULY

Monday, 30th – Tacos for a Crowd/Taco Salad

Tuesday, 31st -(Working Late)  – Cheesy Chicken and Dressing Casserole, Veggie  (Good)

  • 2 Tbsp olive oil
  • 4 boneless skinless chicken breasts, cut into 1/2 inch pieces
  • 1 large onion, chopped
  • 1 (8 ounce) package baby bella mushrooms, quartered
  • 3 cloves garlic, minced
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1/4 cup whole milk
  • 1 (6 ounce) package chicken-flavored stuffing mix)
  • 5 Tbsp butter, melted

Preparation:

Preheat oven to 350°. Spray a 13×9 inch baking dish with nonstick cooking spray.

In a large skillet, heat oil over med-high heat. Add chicken, and cook, stirring occasionally. until chicken is lightly browned and cooked through. Using a slotted spoon, remove chicken from pan, and place in prepared baking dish.

Reduce heat to medium. Add onion, mushrooms, and garlic to skillet; cook for 4-5 minutes, or until vegetables are tender. Spread onion mixture evenly over chicken. Top evenly with cheese.

In a small bowl, combine soup and milk. Pour mixture over cheese.

in a medium bowl, combine stuffing mix and melted butter. Sprinkle evenly over cheese. Bake for 25-30 minutes, or until hot and bubbly. Serve immediately.

AUGUST

Wednesday, 1st –  Taco Casserole  (good, great way to use leftover Taco Meat)

Thursday, 2nd (Sorting) – Easy Chicken Stir Fry, Egg Rolls  (Good)

Friday, 3rd – Ham and Cheese Sliders, Chips and Dip (Good)

Saturday, 4th – Grilled Pork Chops, Tabouli Salad, Fruit

TABOULI SALAD  (good)

2 cups water
1 cup coarse bulgur wheat
1 bunch scallions, sliced
2 Roma tomatoes, chopped
2 Kirby cucumbers, peeled and chopped
1 bunch Italian parsley, stems removed
2 garlic cloves, peeled
1/4 cup olive oil
2 tbsp. lemon jusice
salt and freshly ground pepper to taste

Boil water in a small saucepan. Add bulgur wheat, cover saucepan, and turn off heat, leaving saucepan on burner. Allow bulgur to steam until all the water has been absorbed, about 10-15 minutes. Meanwhile, slice scallions, tomatoes, and cucmbers. Place parsley and garlic in a food processor and process until finely chopped. When bulgur is finished, place in a large mixing bowl and add scallions, tomatoes, cucumbers, parsley, and garlic. Drizzle olive oil and lemon juice into the bowl and toss thoroughly. Add salt and pepper to taste. Either serve warm or put in refrigerator for 1 hour to allow flavors to blend.

Sunday, 5th – Rotis Chicken, Rice and Veggie

WEEK #2

Monday, 6th –(Working Late) Sausage and Rice Casserole

  • 2 lbs. ground pork sausage
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 (10.75 ounce) cans cream of chicken soup
  • 1 (14 ounce) can chicken broth
  • 1 3/4 cups uncooked long-grain rice

 Preparation:

Preheat oven to 350°. Spray a 13×9 baking dish with nonstick cooking spray.

In a large skillet, combine sausage, onion, and celery; cook over med-high heat until sausage is browned and crumbly. Drain well. Stir in soup, broth, and rice. Spoon into prepared baking dish. Cover with heavy-duty aluminum foil, and bake for 45 minutes, or until rice is tender. Serve immediately.

Tuesday, 7th-(Working Late) Tuna Cheese Sandwiches (Simple & Del – pg 123) Colorful Pasta Salad (Simple & Del – pg 161)

Wednesday, 8th – Ham Cheddar Chowder, Biscuits  (good)

Thursday, 9th – (Sorting) Macadamia Crusted Mahi Mahi,  Baked Potato, Veggie  (Good)

Friday, 10th – Sloppy Joes, Cripsy Baked Potato Wedges   (good -dip for potato wedges very good)

Saturday, 11th – Steak, Smashed Red Potatoes (Simple & Del – pg 157), Corn

Sunday, 12th – Grilled Chicken Breast, Italian Veggie Skillet (Simple & Del – pg 179)

Monday 2 (working late) – 

Baked Spaghetti

1 pound ground beef
1 26-ounce jar spaghetti sauce
1 pound angel hair pasta
2 cups shredded Cheddar cheese, divided

Preheat oven to 350 F. In large skillet, cook ground beef until brown; drain. Mix spaghetti sauce into skillet. Reduce heat and simmer. Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook until al dente, about 4 or 5 minutes for angel hair. Drain. Mix together spaghetti and meat mixture. Stir in 1 cup cheese. Pour into 9 x 13-inch pan. Top with the remaining cheese and bake for 30 minutes, or until heated through and cheese is bubbly. Serves: 6 to 8.

Wed -4 – Bruschette Chicken Bake and Salad

Thurs – 5  (Working Late) – Sunny Side Eggs, Sausage and Toast

Fri – 6 – OFF NO School – Mac and Cheese, Garlic Bread  and Salad

Sat – 7 – Chicken Dumpling Casserole and Veggie

Sun – 8 – EASTER  – Spiral Ham, Easy Skillet Green Beans (Emealz Easter Menu), Honey Glazed Carrots,  Garlic Mashed Potatoes, Cheesy Muffins, Cherry Almond Crisp and Lemon Cake.

It’s Monday……Menu Plan Monday!  

Another week is upon us.  It seems like I just menu planned, but all our food is gone again.  Some new meals from the last two weeks that were a hit, include the following:

Sunday – Sausage Rice Casserole

Monday – Lasagna Roll Ups – Salad – Garlic Bread

Tuesday – Soup and Grilled Cheese Sandwich 

Wednesday – Jeff’s Chicken Casserole – Green Beans

Layer cream of chicken soup
Diced uncooked chicken breast
Cr of Chicken Soup
Stovetop Stuffing

Bake at 350 for 1 hour. 

German Potato Pancakes

Thursday – Country Ham and Cheese Macaroni/ Vegetable

Country Ham and Cheese Macaroni Casserole

1 lb. smoked cooked ham, chopped
1 large onion, diced
1 lb. elbow macaroni
2 c. shredded extra sharp cheddar cheese (80z)
1 c. sour cream
1 can cream of chicken soup
1/4 c. margarine, melted
1 c dry, plain bread crumbs

Boil noodles according to package instructions along with diced onion, until noodles are done. Drain. Meanwhile, mix together rest of ingredients and add salt and pepper to taste. Mix in cooked noodles/onion and add to oven safe casserole dish (greased). Pour bread crumbs evenly over noodles and then pour melted butter over the crumbs.

Bake for 30-45 minutes at 375 degrees or until cheese is well melted.

Friday – Pizza Burgers – Curly Fries

Saturday – French Toast, Eggs and Bacon

Sunday – Roast Sticky Chicken (Crockpot) /Wild Rice/ Brocolli
