Hello Friends –  Hope you have had a wonderful weekend.   We are a little late on our menu plan this week.  Since we have Monday off, we decided to save our shopping for Monday.   As you can see we have a lot of carry over from our last menu.  This sure made for easy planning this week.  Hope you all have a wonderful, productive and warm week!

Tuesday, 16th – BEEF STIR-FRY brown rice (Fresh January 15th, 2016)

Wednesday, 17th – Biscuits and Gravy

BISCUITS  AND GRAVY (Family Fav) – Double Recipe for our Family –

25 min | 5 min prep

SERVES 6 -8

· 1 lb bulk pork sausage

· 2 tablespoons butter or margarine

· 6 tablespoons all-purpose flour

· 1/4 teaspoon salt

· 1 teaspoon pepper

· 3 1/2 cups milk

  1. In a large saucepan, cook the sausage over medium heat until no longer pink.
  2. Stir in the butter until its melted.
  3. Sprinkle the mixture with the flour.
  4. Gradually stir in the milk, salt, and pepper.
  5. Bring the gravy to a boil and cook and stir for 2 minutes until thickened.
  6. Serve over biscuits.

Simple Alfredo Sauce

One of our go to meals, when Mom forgot to take out meat, is Alfredo Pasta.  One evening when discovering that we had no jar sauce, I searched the internet for a homemade sauce.   Once I made the homemade sauce, there was no going back.  We may change the overall recipe, but the sauce is always the same!

Simple Alfredo Sauce
 
Recipe Type: Pasta, Sauce
Serves: 8
This is our family go to Alfredo Recipe.
Ingredients
  • 16 ounces uncooked fettuccine
  • 1/2 cup butter, cubed
  • 1 onion, chopped
  • 4 cloves of garlic (we like it garlicky)
  • 3 cups heavy whipping cream
  • 1-1/2 cup grated Parmesan cheese
  • 2 garlic clove, minced
  • 1/2 teaspoon pepper
  • 2 teaspoon minced fresh parsley
Instructions
  1. •Cook fettuccine according to package directions. Meanwhile, in a large saucepan, melt butter over medium heat. Sauté onion and garlic until tender. Stir in heavy cream. Bring to a gentle boil. Reduce heat; simmer, uncovered, for 3 minutes, stirring constantly.
  2. • Add cheese, garlic and pepper; cook and stir until heated through. Drain fettuccine; toss with sauce mixture. Sprinkle with parsley.

Quick Meal: Creamy Angel Hair with Sausage and Spinach

My hubby has been asking me for YEARS to take pictures of the meals I make.    Tonight’s supper was yummy enough that I actually did!   Unfortunately, I did not take a picture of the big beautiful platter of pasta.  I had to take a picture of the little leftover portion.   There was not much for leftovers either.   Very quick to prepare, so great for a week day meal.

Ingredients
  • 14 oz. package smoked kielbasa
  • 1/2 large chopped onion
  • 2 tablespoons minced garlic
  • 2 teaspoons olive oil
  • 2 cans of chicken broth
  • 8 oz. angel hair pasta, broken in 1/2
  • 9 oz. package baby spinach
  • 1/3 cup whipping cream
  • 5 oz. of shredded Parmesan Cheese (the kind in the dairy section, not the green jar stuff!)
Instructions
  1. Slice kielbasa into 1 inch pieces.
  2. Sauté kielbasa, onion, garlic and oil in a large soup pot until vegetables are opaque.
  3. Add broth and 1/4 cup water; bring to a boil.
  4. Add pasta; cook for 3 minutes.
  5. Add Spinach; cook about 1 minute.
  6. Stir in cream and parmesan cheese.

 

I served this with Garlic Bread and Prince Edward Vegetable Medley.
