Supper tonight…..Crockpot Roast and Honey-Glazed Carrots


HONEY GLAZED CARROTS


1 package (16 ounces) baby carrots
1 tablespoon water
2 tablespoons butter or margarine
2 tablespoons honey
1 tablespoon lemon juice


Place carrots and water in a 1-1/2 qt microwave dish.  Cover and microwave on high for 5-7 minutes until crisp-tender.  Meanshile, melt butter in a skillet; stir in honey and lemon juice.  Cook over low heat for 5 minutes, stirring constantly.  Add carrots; cook and stir for 2 minutes or until glazed. 


YIELD:  4 servings


1/2 cup serving 127 caories, 6 gm fat.

  1. I do something similar, only without the honey.  Put your carrots in a casserole dish, dot with butter, salt and pepper it.  Put it in the 350 degree oven alongside your roast and cook for an hour.  Those carrots are so sweet, you wouldn’t believe it!
