I am off to a bit of a slow start today. We are on our way to pick up a few things from Walmart then I have to clean the kitchen and do laundry the rest of the day.
Yesterday….. we spent doing garden things all day. I froze two meals of broccoli, 4 meals of green beans and made about 28 to 30 cups of salsa. The Salsa took a very long time as I didn’t have enough Roma tomatoes to make the 20 pounds needed for our salsa recipe. I had to peel cherry and grape tomatoes to make up the rest. That took a LONG time, but at least I used up the tomatoes we had vs. let them go bad.
Today, I will grate up the zucchini to freeze.
Lat night I made Swiss Chicken with corn on the cob from our garden. It was very good!!
Swiss Chicken
4 boneless, skinless chicken breasts
4 slices of Swiss Cheese
1 can of cream of chicken soup
1/4 cup dry white wine
1/2Cup herb-seasoned stuffing
1/4 cup butter, melted
Arrange chicken in greased 9 x 13 inch pan. top with Cheese slices. Combine soup and wine and stir well. Spoon evenly over chicken and sprinkle with stuffing mix. Drizzle butter over crumbs. Baked uncovered at 350 for 45 to 55 minutes. Very Easy and Good!!!

I CAN’T EVEN BEGIN TO IMAGINE PEELING THE SKIN FROM 20 LBS OF CHERRY OR GRAPE TOMATOES!

@cherylyn_p – Only about 5 to 7 pounds of the tomatoes were cherry and grape. I had some roma’s just not enough! My hubby said…never again. LOL!
