As you can see by the TO DO List – I didn’t get everything done.  It was far too nice a day.  We went to church.  After Church everyone came home and helped wash dishes.  I didn’t do them last night since I fell asleep early.   I washed, Hubby rinsed and Josh and Amy dried.  I made omelets for brunch and then Josh went with his Dad for a while.   Tommy took a good nap and hubby and I watched the movie SAW.  


After nap we all went outside to play.  Tommy had a good  time and we started a little bonfire of course.   After supper is was bath time for Tommy and more laundry for me to do!    I am getting ready to call it a night now and read for a bit and go to sleep.   Since I am working late tomorrow I made Crab Salad for the family to have tomorrow night.   I shared the recipe below.   Time to get Tommy ready for bed.  Hope everyone had a great weekend!  Ours sure flew by!  


 


CRAB SALAD ON CROISSANTS


Prep/Total Time:  20 minutes


 


2 packages (8 ounces each) imitation crabmeat, flaked
2 celery ribs, chopped
¼ cup chopped green onions
¼ cup shredded cheddar Cheese
3 tablespoons mayonnaise
3 tablespoons plain yogurt
8 croissants, split
Lettuce leaves and tomato slices



In a bowl, combine the crab, celery, onions and cheese.  Combine the mayonnaise and yogurt until blended; add to crab mixture and toss to coat.  Line croissants with lettuce; top with crab salad and tomato slices.  Yield: 8 Servings

  1. Wow…you have had a lot happen…I bet you were glad to have the notebook handy and I’m sure your husband was very grateful for having too with your stay in the hospital and recovery time…bless your heart!

    I love this recipe…this looks good.  What a great thing to serve for a luncheon or Sunday afternoon light meal!

  2. Sounds like you had a good weekend.  I’ll bet my hubby would like the crab salad…he loves seafood….only thing is I don’t!  LOL!  He said he’s going to make sure to eat some seafood while he’s in New Orleans without me!  Have a great day Jen!  ~Jen
